This Ice Cream Sandwich Tiramisu is what happens when a classic Italian dessert meets Ben & Jerry’s creativity. Coffee‑dipped ice cream sandwiches are topped with a light mascarpone cream and finished with a dusting of cocoa for a dessert that feels indulgent, playful, and surprisingly effortless. No baking, no fuss — just pure dessert joy.

INGREDIENTS:

  • Ben & Jerry’s Ice Cream Sandwiches (individual packets)
  • 150ml double cream
  • 125g mascarpone
  • 2½ tbsp golden caster sugar
  • 150ml strong coffee
  • 1 tsp cocoa powder
DIRECTIONS:
  1. Brew the coffee

    Prepare 150ml of strong coffee and set aside to cool slightly.

  2. Make the cream

    In a bowl, whisk the mascarpone briefly to loosen. Add the double cream and golden caster sugar, then whisk until thick, smooth, and softly holding its shape — firm enough to pipe, but still light.

  3. Dip the sandwiches

    Quickly dip each ice cream sandwich into the cooled coffee, allowing the cookie to absorb a little flavour without becoming soggy.

  4. Assemble and finish

    Pipe a tight swirl of the mascarpone cream over each sandwich and dust generously with cocoa powder.

  5. Serve or chill

    Enjoy straight away, or pop into the freezer for around 30 minutes if you prefer a firmer finish.
